Generally if you order just a salad, you are wanting to eat light. Not in Morocco! Ordering a set meal at the beautiful Dar Hatim in Fez, I was offered three courses – salad, main and dessert. Fouad, who was running front of house, with his wife Karima in the kitchen, are known citywide for their in-home restaurant.
This picture is of the salad ‘course’. 14 separate preparations and two rounds of bread. That was enough for our whole dinner and covered our daily nutritional intake – beets, carrots, beans, cucumber, zucchini, beans, potatoes, olives, slaw. And the best part – they were all incredibly fresh, spicy and healthy salads and legumes. I wish I could have it for dinner tonight.
