Cheesy goodness awaits!

 

La Latteria is an Italian cheese-lover’s heaven! Having opened only six weeks ago, this local milk shop, in the true sense of the word, is already establishing itself as the authority in Italian soft cheese.

Co-owner Kirsty Laird spent time talking me through the finer points of her ‘mozarella laboratory’, whilst stretching out the day’s supply of burrata. Kirsty and her business partner Giorgio Linguanti, met while Kirsty was head chef at Tutto Bene in Southgate, “He was my supplier from That’s Amore Cheese in Thomastown. He taught me all I know about Italian cheese and we decided last year to go into business together and open La Latteria.”

The fresh pasteurised (but not homogenised) milk – on sale by the litre and in the cheese, is sourced from local suppliers, except for the buffalo milk which comes from NSW. The hard cheeses and blue cheese is also locally sourced and all the other varieties of cheese are made on premises. 

Provolone, bocconcini, mozzarella and gingham!

 

Indulge in freshly stretched mozarella, burrata, bocconcini, provolone and ricotta. Kirsty also makes salted and unsalted butter and fresh yoghurt.  I tried the olive stuffed bocconcini, of which I could have eaten ten, and the buffalo mozarella which was outstanding, served simply with crusty bread and olive oil.     Oh my goodness, how delicious, will have to go and see this place!

    Just wondering though do they have cows onsite at the shop that they milk in the mornings?
